This olive oil is carefully selected by the master taster and blender. The first oils produced between the end of October and beginning of November from Arbequina, Hojiblanca and Picual varieties. These oils are stored in 2000L tanks where they are analyzed and then selected in varying quantities and blended to create a superb olive oil with a limited production.
Harvest: From half of October to early November.
Production: Cold extraction 2 phases. Only with early harvested olives, 75-80% still green.
Varieties: Blend of Arbequina, Hojiblanca and Picual. (Proportions and % may change depending on the selection made by the team every harvest)
Zone of production: Finca el vicario, Desierto de Tabernas (Almería) Spain
Panel test/organoleptic analysis:
Color/aspect: Leafy green with hints of gold, limpid aspect. Filtered
Aroma/bouquet: Touches of recently cut grass, tomato, green olive and hints of citrus and dried fruits less notable.
Flavour/taste: Smooth with light bitterness almost unnoticeable, peppery finish. It has a pleasant after taste with a persistent olive flavour and small after notes of spices.
With the combination of 3 varieties we produce a medium intensity, well balanced exceptionally fresh and high quality-premium olive oil. Also the homogeneity and consistency between the years is easier to achieve as we control the final result with the blend.
It has Medium oleic acid content 70-75%, high polyphenols: 450-600 mg / kg depending on batch

Recommendations of use: Cold use for dressing salads, goat cheese, pasta, marinades, cold soups like Spanish gazpacho and maybe just to use it raw on toasted bread.
